Vegan Month of Food: Day One

Chaz and I are so excited to be a part of this truly awesome project. After reading the PPK forum and some of the themes and ideas floating around, we became truly inspired. The way things are for us right now, our “theme” is delicious homemade vegan food on a budget. We are broke as a joke.

Our real goal is to start our weekly budget out at $45/week and knock it down to $35/week to feed 2 adults. We want to accomplish this within a month’s time so Vegan MoFo is the perfect venue! This will take strategies and planning and some sleuth-like spending, but we’re more than up for the challenge. And we really hope to show people that being vegan is not only affordable but easy and tasty too!

We’re confident we can stick to our budget goals and successfully cook and eat DIFFERENT vegan awesomeness every single day.

It takes a bit of planning to get this down. We plan on blogging about the dinners we cook together, as most other meals we’re not with one another. But it will vary. The first week of meals is shaping up to look something like this:

  1. Seitan Pot Roast with Roasted Veg
  2. Seitan Tacos
  3. BBQ Seitan with Homemade Baked Beans
  4. Pinto Bean Tacos with Chips & Salsa
  5. Asian Pasta dish
  6. Curry Pasta dish
  7. Stirfry

Tonight’s dinner is pasta with zucchini and tomato sauce. We went to the coop this morning and picked up this awesome pasta called The Wizard’s Reply. It’s a combination of wheat pasta bowties with a few other vegetables like beets made into pastas. Neither of us can remember all that it’s made of but I know we’re both really excited to try it out.

The actual budgeted grocery meals start tomorrow. We’re interested to see how our fore casted prices on food items really compare to our actual cost. We do have a separate budget allocated for our pantry, such as spices, oils, vinegars, Braggs, etc. because these are used over long periods of time.

There is a static page we’ve dedicated to our spending entitled Our Budget that we’ll be using to document our spending through uploaded images of our receipts. We feel like this will prove to be a good method to track and tweak future grocery lists and meal plans. It’s all a process, but it’s one we’re inspired to make happen.
